Gluten free Breakfast casserole. Also low carb.

We like meat here and cheese lots of cheese. So we threw together this one night and it has been a staple ever since. This reheats well to feel free to double and eat it for breakfast during the week.

Makes 6 servings

1 lbs sausage. I used Bob Evans
1/2 onion, chopped
1/2 pepper, chopped. (We use red)
1 small tomato,chopped
4 oz cream cheese, cubed
6 large eggs
1/4 cup milk (We used 1%)
Salt and pepper to taste
Dash hot sauce (optional)
Colby cheese

Grease a 2 qt casserole dish.

Cook sausage with onions, pepper and tomato. Drain on paper towels. Push into pan to form a crust layer. Place cream cheese cubes on top.
Beat eggs, milk, salt and pepper together. Pour on top of cream cheese. Sprinkle the cheese on top.
Bake in preheated oven until eggs are set and cheese is brown.

You can also use low fat cream cheese, turkey sausage and egg beaters to make it lower calories.


Green living and clean eating


Here at our house we eat clean. Meaning mostly organic food. We do not eat processed food. There is not a box of Mac and cheese to be found. Most of our food is Gluten free. We eat lots of veggies and fruit. I have been blessed by having a child who will eat everything. I have noticed that gluten upsets our stomachs and tends to make Aiden really hyper. So we avoid it. There are days and recipes that we will post that are not gluten free. We are human and like the occasional treat.
We also make our own homemade cleansers, laundry soap and dish soap. We live on less because we choose to be frugal. Life is less complicated that way. Less stuff more prayer.
I am blessed and try not to take anything for granted.

I live with my six year old son Aiden and a few crazy pugs. I enjoy cooking, crafting and traveling. My son is my world. He is creative and has a sarcastic dry humor that keeps me on my toes. His antics keep me laughing.
